Simple Chocolate Marble Cake
A very simple vanilla and chocolate, buttery cake with a marbled effect.
Perfect for tea (or coffee) time
Ingredients:
cake flour | 200 gm | |
baking powder | ¼ tsp | |
SALTED butter | 200 gm | |
fine caster sugar | 150 gms | |
eggs | 3 | |
vanilla extract | 2 tsp | |
cocoa powder | 3 Tbsp |
Method:
- Sift the cake flour and baking powder into a bowl. Set aside.
- Beat together the sugar and butter till smooth and creamy.
- Add one egg at a time, beating between each addition.
- Add the sifted ingredients and fold in just till incorporated.
- Divide the batter into two equal portions. Sift the cocoa powder into one and add vanilla extract to the other. Mix once again with a spatula.
- Butter a medium-sized baking pan lightly and line with grease-proof baking paper.
- Pour in the vanilla batter. Tap gently on the countertop.
- Now add ladles full of chocolate batter spaced evenly into the vanilla batter.
- Now take a table knife and create swish patterns through the batter without over mixing.
- Bake at 160ºC/320ºF for 40-50 minutes, till a toothpick inserted in the centre, comes out clean.
- Place baking pan on wire rack and leave to cool. Release the edges of the cake by going around it with a sharp knife and then invert.

Notes:
- I always use salted butter. If you are using unsalted butter, add an 8th of a teaspoon salt to the sifted flour mixture.
- Add orange zest instead of vanilla extract for a different flavor.
